Tex-Mex Turkey Meatballs
Who doesn’t love Tex-Mex? I know I do! Now you can enjoy this great tasting cuisine without worrying about all the saturated fat and sodium.
Ingredients:
- 1lb Ground Turkey Breast
- 2 Large Egg Whites
- 1/4 Cup Whole Wheat Bread Crumbs
- 1/8 Teaspoon Ground Sea Salt
- 1/4 Teaspoon Fresh Ground Pepper
- 2 Teaspoon Extra Virgin Olive Oil
- 1 Cup Frozen Yellow or White Corn
- 1 Can Low Sodium Black Beans
- 2 Cups Fresh Diced Tomatoes
- 1/2 Cup Low-Sodium Chicken Broth
- 1 Tablespoon Fresh Lime Juice
- 1 Teaspoon Ground Cumin
- 1/4 Cup Chopped Fresh Cilantro
Directions:
In a large mixing bowl, combine the ground turkey breast with the egg whites, breadcrumbs, salt and pepper and mix thoroughly. Shape into 16 golf ball sized meatballs. Then, in a large skillet, heat the olive oil on medium-high. Add the meatballs, and first sear the outsides until golden brown, then cook 3-5 minutes by turning frequently, until the meatballs are browned on all sides. Next, add the corn, beans, tomatoes, lime juice, broth and cumin and mix well. Reduce the heat to medium, partially cover the skillet and cook for an additional 3-5 minutes, until the meatballs are cooked all the way through. Stir in cilantro and enjoy!!! This delicious dish makes 4 servings.
