Tomato Cheese Frittata

Ingredients
2 shallots, finely chopped
1 garlic clove, smashed and minced
1 egg, beaten
2 egg whites, beaten
1 tbsp crumbled feta cheese
1 cup cherry tomatoes, cut into quarters
4 large leaves of fresh basil, shredded
Directions
Preheat the oven to 375 F. Place a 6-inch, ovenproof omelet pan or small saute pan over moderate heat. Coat the pan with nonstick cooking spray. Once the pan is hot, add the shallots and garlic, and saute until the shallots are tender, about 5 minutes.
In a small mixing bowl, whisk together the egg, egg whites, and cheese. Add the tomatoes and basil and pour over the shallot mixture. Stir just to combine. Move the pan to the oven and bake until the frittata puffs and is just set in the center, about 5 minutes.
